fix: global serialization hardening for layouts and components

- Sanitized getEntityConfig at the source to prevent Navbar errors.
- Sanitized user object in DashboardLayout to protect Sidebar.
- This ensures all collections and custom routes are immune to 'Only plain objects' errors.
